Here's a general recipe for traditional beef pho:

Ingredients:

- 2 pounds (900g) beef bones (such as oxtail or marrow bones)

- 1 onion, halved

- 3-4-inch (7-10cm) piece of fresh ginger, sliced

- 5 star anise

- 3-4 whole cloves

- 1 cinnamon stick

- 2-3 cardamom pods

- 4-6 cups (950-1420ml) beef broth

- 1-2 tablespoons fish sauce (adjust to taste)

- 1 tablespoon sugar

- 8 ounces (225g) rice noodles

- 1/2 pound (225g) thinly sliced beef (such as sirloin or flank steak)

- Bean sprouts, Thai basil, lime wedges, and fresh cilantro for serving

- Hoisin sauce and sriracha (optional) for serving

Instructions:

1. Char the onion and ginger: You can do this by holding the onion and ginger slices over an open flame or placing them under a broiler until they are lightly charred. This step helps to enhance the flavors of the broth.

2. Prepare the spice bag: Wrap the star anise, cloves, cinnamon stick, and cardamom pods in a cheesecloth or muslin bag and tie it securely.

3. Boil the beef bones: Place the beef bones in a large pot and cover them with water. Bring the water to a boil and let it cook for a few minutes. Then, drain the bones, rinse them well, and return them to the pot.

4. Make the broth: Add the charred onion, ginger slices, spice bag, and beef broth to the pot with the bones. Bring the mixture to a boil, then reduce the heat to low and let it simmer for at least 4-6 hours, skimming off any impurities that rise to the surface.

5. Season the broth: Add fish sauce and sugar to the broth, adjusting the amounts to taste. Continue simmering for another 30 minutes to allow the flavors to meld.

6. Prepare the rice noodles: Cook the rice noodles according to the package instructions. Drain and set aside.

7. Prepare the toppings: Thinly slice the beef and set it aside. Wash and prepare the bean sprouts, Thai basil, lime wedges, and fresh cilantro for serving.

8. Assemble the pho bowls: Divide the cooked rice noodles among serving bowls. Top them with slices of raw beef.

9. Serve: Ladle the hot broth over the noodles and beef. The hot broth will cook the raw beef slices. Serve the pho with bean sprouts, Thai basil, lime wedges, fresh cilantro, hoisin sauce, and sriracha on the side so that each person can customize their bowl according to their taste.
