Ingredients:

For the chicken tikka:

- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

- 1/2 cup plain yogurt

- 2 tablespoons lemon juice

- 2 teaspoons ground cumin

- 2 teaspoons ground coriander

- 1 teaspoon paprika

- 1 teaspoon turmeric

- 1 teaspoon garam masala

- 1/2 teaspoon ground cinnamon

- 1/2 teaspoon ground cardamom

- 2 cloves garlic, minced

- 1-inch piece of ginger, grated

- Salt to taste

- Vegetable oil for grilling

For the masala sauce:

- 2 tablespoons vegetable oil- 1 big onion, finely chopped

- three cloves garlic, minced- 1-inch piece of ginger, grated

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon paprika

- 1/2 teaspoon turmeric

- 1/2 teaspoon garam masala

- 1/2 teaspoon chili powder (adjust to taste)

- 1 cup tomato puree

- 1 cup heavy cream

- Salt to taste

- Fresh cilantro leaves for garnish

Instructions:

1.In a bowl, integrate the yogurt, lemon juice, floor cumin, floor coriander, paprika, turmeric,garam masala, ground cinnamon, ground cardamom, minced garlic, grated ginger, and salt. Mix well.

2.  Add the chicken pieces to the marinade and coat them evenly. Cover the bowl and refrigerate for at least 1 hour, allowing the flavors to meld.

3. Preheat the grill or oven broiler. Thread the marinated chicken pieces onto skewers and grill or broil until cooked through and slightly charred. Set aside.

4. Heat vegetable oil in a large skillet or saucepan over medium heat. Add the chopped onions and sauté until they become soft and translucent.

5. Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

6. Add the ground cumin, ground coriander, paprika, turmeric, garam masala, and chili powder. Cook the spices for a minute to toast them and release their flavors.

7. Pour in the tomato puree and stir well to combine with the spices. Simmer the sauce for 5-7 minutes until it thickens slightly.

8. Reduce the heat to low and stir in the heavy cream. Simmer for another 2-3 minutes, allowing the flavors to blend. Adjust the seasoning with salt according to your taste.

9. Add the grilled chicken tikka pieces to the sauce and simmer for a few minutes to allow the chicken to absorb the flavors.

10. Garnish with fresh cilantro leaves.
