Julienne the carrots and zucchini, and sauté them separately in a little oil until tender. Slice the mushrooms and radishes, and lightly sauté them as well. Set aside.
2. Cook the protein: If using beef or chicken, marinate the meat in a mixture of soy sauce, sesame oil, sugar, and minced garlic for at least 30 minutes. Then, stir-fry the marinated meat in a pan until cooked through. If using tofu, drain and pat dry, then cut it into small cubes and sauté until golden. Set aside.
3. Prepare the sauce: In a small bowl, mix together 2 tablespoons of gochujang, 1 tablespoon of soy sauce, 1 tablespoon of sugar, and 1 tablespoon of sesame oil. Adjust the quantities according to your taste preferences.
4. Fry the eggs: Heat a little oil in a non-stick pan and fry the eggs to your liking (usually sunny-side-up is preferred for bibimbap).
5. Assemble the bibimbap: Divide the cooked rice into serving bowls. Arrange the seasoned vegetables, protein, and fried egg on top of the rice, creating separate sections for each ingredient. Drizzle a little sesame oil over the top.
6. Serve: Place a dollop of the prepared gochujang sauce on one side of the bowl. Sprinkle sesame seeds over the entire dish. To eat, mix everything together thoroughly, making sure to incorporate the sauce and yolk from the fried egg. Enjoy the bibimbap while it's still warm.
