For the peanut sauce:
- 1 cup roasted peanuts, unsalted
- 3 cloves garlic
- 1 tablespoon tamarind paste
- 2 tablespoons soy sauce
- 1 tablespoon honey or brown sugar
- 1/2 teaspoon chili powder (adjust to your preferred spiciness)
- 1 cup coconut milk
- Salt to taste
Instructions:
1. In a bowl, combine soy sauce, vegetable oil, honey or brown sugar, minced garlic, ground coriander, ground cumin, turmeric powder, salt, and pepper. Mix well to make a marinade.
2. Add the chicken strips to the marinade, making sure they are well coated. Cover the bowl and let it marinate in the refrigerator for at least 1 hour, or overnight for better flavor.
