Here's a recipe for Indian biryani:

Ingredients:

- 2 cups basmati rice

- 1 pound boneless chicken or lamb, cut into bite-sized pieces

- 2 onions, thinly sliced

- 2 tomatoes, chopped

- 1 cup plain yogurt

- 4 cloves garlic, minced

- 1-inch piece of ginger, minced

- 2 green chilies, chopped

- 2 bay leaves

- 2 cardamom pods

- 2 cinnamon sticks

- 4 cloves

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1 teaspoon garam masala

- 1/2 teaspoon turmeric

- Salt to taste

- 3 tablespoons ghee or vegetable oil

- 1/four cup chopped clean cilantro (optional)

Instructions:

1.Rinse the rice in bloodless water till the water runs clear, then soak the rice in bloodless water for 30 minutes.

2. In a large pot, heat the ghee or vegetable oil over medium heat. Add the onions and sauté until they turn golden brown.

3. Add the garlic, ginger, green chilies, bay leaves, cardamom pods, cinnamon sticks, and cloves. Cook for 2 minutes.

4. Add the chicken or lamb and cook for 5 minutes or until the meat is browned on all sides.

5. Add the tomatoes, coriander powder, garam masala, turmeric, and salt. Stir to combine and cook for another 5 minutes.

6. Add the yogurt and stir until well combined.

7. Drain the rice and add it to the pot with 3 1/2 cups of water. Stir to combine.

8. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 20-25 minutes or until the rice is tender and the liquid has been absorbed.

9. Fluff the rice with a fork and remove the bay leaves, cardamom pods, cinnamon sticks, and cloves.

10. Garnish with chopped cilantro, if desired, and serve hot.
